Gluten Free Crustless Quiche
Breakfast is the most important meal of the day for females. You see, our bodies are just not designed to support long intermittent fasts that involve skipping breakfast. This is because long intermittent fasts will ultimately spike our stress hormone cortisol and deplete our sex hormones which can result in low thyroid, wonky periods, fatigue, weight gain around the waist, infertility, and anxiety.
This is why it's CRUCIAL to eat a breakfast within 60-90 minutes of waking up that has at least 30 grams of protein. YES. You heard me right- 30 grams! This will ensure our blood sugar is balanced throughout the day, and continue to make us more insulin sensitive throughout the day.
This is important because we must have balanced glucose and insulin levels to enjoy healthy and balanced hormones which make us feel groovy.
One of my favorite breakfast foods are eggs. And if you're looking for something quick and easy and which doesn't involve cleaning a pan each morning, then look no further then this delicious crustless quiche (recipe below).
I love it because you can grab and go, and you can toss your leftover veggies in it from your fridge that would otherwise go bad!

Crustless Quick Recipe
Ingredients
10 large eggs
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 tablespoon italian herb seasoning
1 cup cheddar cheese ( I used raw cheddar)
2 cup veggie of choice (I used asparagus bc I had some left over from night before)
1 cup bacon, ham or sausage (I used bacon)
Method:
Heat oven to 375 F and grease a glass pie pan
Whisk the eggs
Whisk in milk, salt and pepper
Add in the veggies, cheese and meat
Bake for 45-minutes
